veal cutlet with mushrooms, tomato, and wine

Recipe Ingredients for veal provencale

1/4 lb. veal cutlet
1 T. flour
2 T. olive oil
2 oz. mushrooms
1 clove garlic
1/8 c. white wine
1 medium tomato

Recipe Directions for veal provencale

  1. pound veal until very thin

  2. dredge with flour

  3. heat oil and brown veal on both sides

  4. push veal to side

  5. add mushrooms and cook two or three minutes

  6. cover veal with mushrooms

  7. add wine, tomato, salt and pepper

  8. sprinkle parsley
