Recipe Ingredients for Veal Piccata

8 oz veal cutlet
1/2 tsp salt
1/4 tsp black pepper
2 tsp olive oil
8 oz mushrooms, sliced
14 oz artichoke hearts, drained and halved
1 tsp sage
2 tbsp lemon juice
1/2 tsp lemon zest
2 tbsp parsley, chopped

Recipe Directions for Veal Piccata

  1. Sprinkle the veal with 1/4 tsp of salt and the pepper.

  2. Heat 1 tsp of oil in a skillet over medium high heat. Add the veal and sear 2 minutes per side. Remove to a plate and keep warm.

  3. Return the skillet to the heat add remaining oil. Add the mushrooms, artichokes, sage and remaining salt. Cook for about 15 min. until the mushrooms are beginning to brown. Add the lemon juice and zest and simmer for 1 min.

  4. Pour the sauce over the veal and sprinkle with the parsley. Serve.
