very smooth veal liver paste, a little bit spicy from nutmeg and pepper

Recipe Ingredients for veal liver pate

1300 g veal liver
200 ml olive oil
1 tbs Nutmeg
1 tbs pepper

Recipe Directions for veal liver pate

  1. use fresh veal liver, clean of blood vessels

  2. dry with clean cloth or kitchen paper

  3. sautee liver in a pan (puting it from the begining in cold oil) until medium done

  4. let it cool down

  5. pulse in a blender with frying oil

  6. mix with nutmeg and pepper

  7. optional you may use other spices and add onion when sauteeing

  8. since it's pretty dense you may want to add extra oil but then you have to make a new nutritional analysis

  9. traditional recipes call for milk and butter but I do not advise (mixing meat with diary is not a good nutritional option)
