From kaycooks.com This is loosely inspired by the classic Wiener Holstein. However, to make it a little lighter, not to mention quicker to make, I?ve left out the breadcrumbs and the fried egg.

Recipe Ingredients for Veal Escalopes with Capers & Anchovy

300 g veal
1 tablespoon plain flour, seasoned with salt and pepper
25 g butter
1 tablespoon olive oil
6 anchovies, from a tin, cut into small pieces
100 ml white wine
2 tablespoons capers, rinsed
1 Lemon (47 g) Juice (lemon+yields)
1 tablespoon flat-leaf parsley, finely chopped

Recipe Directions for Veal Escalopes with Capers & Anchovy

  1. Dredge the veal escalopes in seasoned flour and set aside.

  2. Over a medium hob, melt the butter and olive oil in a good, non-stick frying pan. When the butter starts to foam, add the veal and cook for 3?5 minutes a side, depending on their thickness, until cooked through. Set aside.

  3. Now turn down the heat and add the anchovies. Using a wooden spoon, break them up in the butter and oil until they?re dissolved. Add the wine, stirring it into the anchovy sauce, followed by the capers, parsley and the lemon juice. Stir together, season with salt and pepper, and pour the sauce onto the veal. If you?re feeling really indulgent, you can enrich the sauce by stirring in an extra 20g butter before you add the parsley and the lemon juice.

  4. Serve with boiled new potatoes or mash and your favourite greens.

  5. (If you want to have a rich, retro experience, you might as well go the full Holstein: after flouring the veal dredge it in beaten egg, and then in breadcrumbs, and cook as per the recipe. Then, rather than dissolving the anchovies in the cooking oil, lay them on top of the veal, whole, complete all the other steps of the sauce, then top the whole dish with a fried egg.)
