Sliced eggplants dip and broil, save left over bread crumbs for layering after. Saute onion, garlic, green pepper and hamburger, drain Add tomatoes no salt and paste to thicken, also add the rest of ingredients, to taste Simmer 45 minutes. In 2 9x13x2 inch baking dishes layer eggplant, mozz cheese, sauce, eggplant, mozz cheese and sauce Cook in oven for 30-45 till mozz is melted, cool on rack.

Recipe Ingredients for Veal Eggplant Parmigiana - Lees

2 lbs lean hamburger, extra lean
3 eggplants, 1/4 inch slices
1 cup parmesan cheese
1 cup italian bread crumbs
60 g green pepper, diced
1 onion, diced
2 cloves garlic, diced
650 g mozzarella cheese, sliced
6 tsps oregano
4 tsps basil
1 tbsp splenda brown sugar
3 (Del Monte) diced tomatoes, canned diced and no salt
3 cans tomato paste, unico
1/2 cup egg beaters

Recipe Directions for Veal Eggplant Parmigiana - Lees

  1. First cut 1/4 inch slices of eggplant (about 3 eggplants), dip in egg batter and then dip in mixed parmesan cheese and italian bread crumbs, layer on large shallow pan and bake for 20-30 mintues till fairly crisp at 350*.

  2. In large pan on stove top melt 2 Tbsps oil and then add garlic, onion, grren pepper to saute for a few minutes, add the 2lbs of hamburger, saute till browned then DRAIN.

  3. Add 3 diced no salt canned tomatoes, and 3 tomato paste, ad the oregano, basil, splenda brown sugar, pepper etc and mix well. Simmer for 45 minutes.

  4. In 2 -9x13x2 inch pans layer

  5. Eggplant, mozz. cheese, tomato mixture, 1/2 of the leftover bread crumbs, eggplant, mozz. cheese, tomato mixture, eggplant, mozz. cheese, tomato mixture, and remaining bread crumbs.

  6. Bake for 30-40 minutes until mozz. cheese is melted at 350*. Makes 12 (460cal) servings, six in each pan.
