Recipe Ingredients for Veal Chops Braised in White Wine and Sage

1 1/2 t salt
1/2 t pepper
3 t minced garlic
1 T sage
3 T. extra-virgin olive oil
1 1/2 pound veal
1 cup dry white wine
15 ounces tomatoes ,crushed plum with juice
1/4 cup balsamic vinegar
1/2 cup raisins

Recipe Directions for Veal Chops Braised in White Wine and Sage

  1. Make a paste with the salt, pepper, garlic, sage and 1 T oil in a small bowl. Rub the chops evenly with the mixture. Heat the remaining 3 T oil in a large skillet f=over high heat. Add the chops a few at a time and brown both sides.

  2. Transfer the chops to a slow cooker.

  3. Add the wine to the skillet and allow some of it to evaporate. Add the tomatoes and scrape up any browned bits from the bottom of the pan. Transfer to the slow-cooker.

  4. Add the vinegar and raisins and stir to combine.

  5. Cover and cook on low for 5 to 6 hours. Carefully remove the chops from the sauce to a platter and cover. Pour the sauce into a small pan, bring to a boil and reduce until concentrated.

  6. Taste and adjust seasoning. Serve chops covered with sauce.
