Recipe Ingredients for Veach's Vegan Burrito Mix - Number 8

8 oz Squash, Zucchini, Baby
2 onion Yellow Onion
425 grams Kidney Beans Light Red - Canned, Western Family
2 tbsp Salsa
1 tbsp Vegetable Oil, Canola

Recipe Directions for Veach's Vegan Burrito Mix - Number 8

  1. In a large skillet sauté 2 yellow (sweet) onions [or one very large] with one can of light red kidney beans (drained and rinsed), 1 cup of sliced fresh zucchini, 2 tablespoons of Chachies mild Salsa, 1 tablespoon canola oil.

  2. Brown until addional oil seems to be needed and then add 1/2 cup of distilled water. Cover and cook until onions are soft.

  3. Tortilla and Additions (not included in nutrition facts):

  4. Microwave each lightly rolled 10 inch Flour tortilla for 15 seconds on high, add 1 tablespoon of Vegenaise if desired.

  5. Add mix to each tortillia, roll and serve.
