Recipe from Rice Dream Vanillla box. Substituted Splenda Brown and Honey for Sugar. Makes 9 Heaping servings. Prep time: 15 minutes. Cook time: 65-75 minutes.

Recipe Ingredients for Vanilla Rice Dream Splenda Honey Bread Pudding

1/2 pound French Bread
2 eggs
1 egg yolks
1 1/2 tablespoons butter unsalted
1/2 cups brown splenda
1/8 cups SPLENDA Brown Sugar Blend
1/8 cups honey
1/4 tsp grated nutmeg
1/2 tsp cinnamon
1 1/2 cups vanilla rice milk
1/4 cup raisins

Recipe Directions for Vanilla Rice Dream Splenda Honey Bread Pudding

  1. Preheat oven to 375 F. Spray 9" x 9" baking dish with nonstick vegetable oil (I used Olive Oil).

  2. Tear bread into 1 inch pieces and place in baking dish (I used Kitchen Shears!).

  3. Mix beaten eggs, egg yolks, butter, honey and 1/2 cup Splenda in large bowl. Put remaining splenda aside.

  4. Add nutmeg, cinnamon, and Rice Dream to mixture, whisking until well blended.

  5. Stir in raisins.

  6. Pour mixture over bread then pat bread and raisins gently into mixture to coat and prevent burning (I topped it with a few extra raisins here). Let set for 10 minutes so bread can absorb mixture.

  7. Cover baking dish with foil. Bake 35 minutes.

  8. Remove foil and sprinkle with remaining splenda. Bake uncovered for another 30-40 minutes, or until top is golden brown and pudding puffs.

  9. Serve warm. Dallop non dairy topping, if desired.
