Recipe Ingredients for Vanilla Pudding Low Fat

2 2/3 cup 2% milk
1/2 cup sugar
1/4 cup cornstarch
1/4 tsp salt
2 tsp vanilla extract
2 egg yolks

Recipe Directions for Vanilla Pudding Low Fat

  1. Bring 2 cups of milk to boil in a small saucepan

  2. Meanwhile combine splenda, cornstarch and salt in a small bowl

  3. Gradually whisk the remaining milk in the dry ingredients

  4. Whisk in the egg

  5. When the milk is boiling pour slowly in a thin stream into the cornstarch mixture, whisking constantly

  6. Add liquid back into pot and stir constantly with a rubber spatula

  7. Bring to a simmer and cook one minute longer

  8. Add vanilla extract

  9. Pour pudding into a bowl, wrap in saran wrap, and chill in fridge for several hours
