Reduced Fat; if you don't drink goat milk, use 1% cow's milk.

Recipe Ingredients for Vanilla Ice Cream

2 cup goat milk
2 cup nonfat half and half
4 egg whites
1/4 cup sugar
1/4 cup Splenda
2 tablespoon vanilla extract

Recipe Directions for Vanilla Ice Cream

  1. Combine the milk and the NF half & half in a saucepan and bring to boiling point. Remove from heat and add the vanilla.

  2. Whisk together the egg whites (or substitute) and sugar.

  3. Gradually whisk in the milk mixture.

  4. Return the mixture to a saucepan and cook over low heat until mixture just comes to a boil, whisking gently. The mixture may thicken slightly. Strain. Mixture will thicken as it cools.

  5. Let cool thoroughly. Freeze in an ice cream machine, according to manufacturer's instructions.
