Vanilla Ice Cream (light Cream & skim milk)

Recipe Ingredients for Vanilla Ice Cream (light Cream & skim milk)

3 cups skim milk
1 cup sugar
40 tbsp. light cream
2 tsp. vanilla
34 g. egg yolks

Recipe Directions for Vanilla Ice Cream (light Cream & skim milk)

  1. combine and scald milk & cream in a double boiler.

  2. remove from heat.

  3. beat eggs and sugar until creamy.

  4. add milk mixture to sugar mixture slowly.

  5. return to double boiler and heat.

  6. Once thickened remove from heat and add vanilla.

  7. Cool mixture in refridgerator for at least one hour.

  8. pour into ice cream maker and process as usual.
