Best Vanilla Cupcakes...hands down

Recipe Ingredients for Vanilla Cupcakes

1 3/4 cups cake flour, not self rising
1 1/4 cups unbleached all purpose flour
2 cups sugar
1 tbsp baking powder
3/4 tsp salt
2 sticks unsalted butter, cut into 1" cubes
4 large eggs
1 cup whole milk
1 tsp pure vanilla extract

Recipe Directions for Vanilla Cupcakes

  1. Preheat oven to 325 degrees. Line cupcake pans with paper liners; set aside.

  2. In bowl of an electric mixer, combine flours, sugar baking powder and salt. Mix on low speed until combined. As mixer is mixing, add butter until just coated with flour.

  3. In a large glass measuring cup, whisk together the eggs, milk and vanilla.

  4. With mixer on medium, add these ingredients in 3 parts, scraping sides of bowl after each addition. Beat until all ingredients are incorporated.

  5. Scoop batter into paper cups with an ice cream scooper; about 2/3 full.

  6. Bake 17-20 min until a toothpick comes out clean.
