Plain vanilla cupcakes - to make chocolate, replace 1 1/2 tablespoons of the flour with cocoa powder. Ice with buttercream icing

Recipe Ingredients for Vanilla Cupcakes

1/2 cup unsalted butter, room temperature
2/3 cup granulated sugar
3 eggs, large
1 tsp vanilla extract
1 1/2 cups plain flour
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup milk

Recipe Directions for Vanilla Cupcakes

  1. Cream together sugar and butter until smooth

  2. Beat in vanilla, then beat in eggs one by one until combined.

  3. Add half of the dry ingredients, and beat together.

  4. Beat in the milk.

  5. Add the rest of the dry ingredients and beat until a smooth consistency.

  6. Spoon into 12 cupcake / muffin papers

  7. Bake for 15 to 17 minutes or until a skewer inserted into the centre comes out clean.

  8. Allow to cool for half an hour before icing.
