Lower fat cupcakes, also slightly reduced sugar. Still extra tasty! Leave off the icing if you want to be really good!

Recipe Ingredients for Vanilla cupcakes, lower fat

6 oz self raising flour
4 oz margarine
5 oz caster sugar
3 eggs
50 ml skim milk
2 tsp vanilla extract
100 g butter
200 g icing sugar
1 tsp vanilla extract

Recipe Directions for Vanilla cupcakes, lower fat

  1. Cream margarine and sugar together with a hand mixer, add in eggs and vanilla extract and mix until creamy again. slowly add flour whilst gently mixing, finally add milk, again whilst gently mixing.

  2. Pour into 12 muffin cases (or 24 smaller cake cases), and bake at 180 degrees (fan oven) for 18 minutes or until a skewer poked into the centre comes out clean.

  3. Transfer to rack to cool.

  4. In a separate bowl cream together butter and icing sugar ( if your butter is too hard you can soften in the microwave for a few seconds). Add 1 tsp vanilla extract, and when cakes are cool either spread or pipe the icing on top.
