An absolutely delicious, but VERY addicting shortbread!

Recipe Ingredients for Vanilla Bean shortbread cookies

0.5 cup Butter
0.5 cup Vegetable Oil, Canola
0.5 cup Sugars, Granulated
4.25 serving Food You Feel Good About All Purpose Flour
0.25 cup Cornstarch
1/5 oz Vanilla Beans
0.25 tsp Salt, Table

Recipe Directions for Vanilla Bean shortbread cookies

  1. Preheat oven to 350F. Line a 13x9" pan with foil. Then coat with cooking spray.

  2. Weigh out 9ounces of flour and place in a small bowl. Add the cornstarch and salt. Stir gently with a whisk.

  3. Soften the butter slightly. Then beat for about 2 minutes until light and fluffy. Add the oil and beat until the mixture is light and fluffy, about 3 minutes.

  4. Gradually add the sugar. Then slice the vanilla beans and scrape out the seeds. Add this to the mixture and then stir with a spatula until they're distributed.

  5. Add the flour and beat until just combined.

  6. Place the dough into the pan. Cover with plastic wrap and then smush out until you have an even layer in the pan.

  7. Remove the plastic wrap. Then place in the oven for 25-30mins or until the edges are light brown.

  8. Cool on a rack for 5mins. Then slice into 36 squares. Gently lift the squares from the pan and place on the rack until completely cool.

  9. Enjoy!
