Low sugar and lots of healthy fat! Adapted from Maria Cade's Coconut Granola bars

Recipe Ingredients for Vanilla Almond Granola

2/3 cup almonds
1 tablespoon honey
1/2 cup butter
2 teaspoons vanilla extract
3 cups old fashioned oats
1/2 cup puffed rice cereal
1/2 cup almonds

Recipe Directions for Vanilla Almond Granola

  1. Puree 2/3 cup almonds in food processor.

  2. In a large bowl, combine almond butter, honey, butter and vanilla.

  3. Combine the remaining ingredients; add to almond butter mixture and stir to coat.

  4. Press into two greased 13-in. x 9-in. x 2-in. baking pans.

  5. Bake at 350 degrees F for 25-30 minutes or until golden brown.

  6. Cool on wire racks.
