Yummy cake with predominantly vanilla flavors, with a touch of almond. This recipe makes a LOT of batter. I recommend cutting it in half, unless you are looking to make a large cake. One batch could make eight or nine 3" or 4" diameter cakes. Another variation includes substitution of whole wheat flour for 1 cup of the all-purpose flour. This produces a cake that's not quite as sweet, possibly better suited for adults than kids. If necessary, a simple glaze of powdered sugar and water works well drizzled on top (not included in the calculations for this recipe).

Recipe Ingredients for Vanilla-Almond Cake(s)

24 tbsp Salted Butter
2.5 cup Sugars, Granulated
5 large Egg, Whole
1.5 tsp Vanilla Extract
0.75 tsp Almond Extract
3.5 cup All Purpose Flour
1 package (3.5 oz) Puddings, Vanilla, Dry Mix, Instant
1.5 Teaspoon Baking Powder
1 cup Milk, Lowfat, Fluid, 1% Milkfat

Recipe Directions for Vanilla-Almond Cake(s)

  1. Mix butter and sugar together until creamy.

  2. Add eggs one at a time, then add the extracts.

  3. Add the flour, then add the baking powder.

  4. Add some milk to thin up the batter and add the pudding mix. Then add the rest of the milk. If it gets too thick (doesn?t want to mix well) while adding the flour, you can add the milk in early. It will be a thick batter but it makes for a stout cake that is good for stacking.

  5. Depending on the pan(s) you use, baking times will vary. Bake at 350F until a toothpick comes out clean (start checking at about 25 minutes).

  6. I've tried this with a cupcake-type pan, and they work well. Just make sure not to overfill the cups (maybe only 1/2 or 2/3 full).

  7. Drizzle with a glaze of powdered sugar and water, if desired. Adding a flavored liquor would be a nice touch.
