Autumn Harvest of goodies in a rice casserole

Recipe Ingredients for Vanessa's Harvest Casserole

2 cloves garlic, sliced
2 tsp olive oil
1 cup brown rice, dry
2 cups water
2 tbsp fat free sour cream
4 oz potatoes
1 apple, chopped
2 carrots, chopped
1 tbsp caraway seeds
1 tsp allspice
1 tbsp parsley
2 tbsp bread crumbs (whole wheat)
2 tbsp parmesan cheese

Recipe Directions for Vanessa's Harvest Casserole

  1. preheat oven to 350

  2. cook garlic in oil (in a frying)

  3. steam potatoes until they are soft enough to cut, but not fully cooked (alternatively, you can cook them in boiling water if you don't have a steamer)

  4. chop potatoes

  5. add all ingredients, except the breadcrumbs and parmesan cheese to a 9X9 baking dish

  6. allow to cook for about an hour, until rice has absorbed the liquid

  7. cover with breadcrumbs and cheese

  8. cook for 10 more minutes

  9. allow to cool before serving
