Recipe Ingredients for Vanessa's Broiled Chicken Caprese

1 1/2 lbs chicken breast, organic, pounded to 1/4 inch thickness
1 tsp dried basil
1 tsp olive oil
1 tomato, sliced
3 oz part-skim mozzarella cheese, shredded
1 pepper

Recipe Directions for Vanessa's Broiled Chicken Caprese

  1. oil pan

  2. broil chicken on oiled pan for 7 minutes (6 inches from broiler)

  3. top with basil tomato and cheese

  4. broil until cheese begins to brown and chicken has reached an internal temperature of 165 degrees

  5. allow to cool for a few minutes

  6. serve
