Not too sweet, but nice and hearty

Recipe Ingredients for Vanessa' Banana Cake

1/4 cup butter
3/4 cup sugar
2 cups flour
2 eggs
1 cup banana
1 tsp vanilla
2 tsp baking powder
1/2 cup milk
2 tsp lemon juice

Recipe Directions for Vanessa' Banana Cake

  1. Add lemon juice to milk and let stand for 10 minutes.

  2. Cream butter with sugar; incorporate eggs, bananas (mashed) and vanilla. Combine dry ingredients in a separate bowl.

  3. Add the dry ingredients to the wet ones, alternating with the milk, mixing well. Pour into a 9-inch square cake pan and bake at 350oF for approx 40 minutes.

  4. Allow to cool for 10 minutes before cutting and serving.

  5. Variations: add poppy or cardamom seeds, or chocolate chips
