Great for lunch or before dinner. I add a package of Knorr Cream of Potato soup mix or Vegetable soup mix to it. It will only add about 30 calories but blends out the flavours

Recipe Ingredients for Val's Potato Soup

8 cups potatos (diced)
1 cup celery (chopped)
1 cup onion (chopped)
2 tbsp butter
1/2 cup carrot (shredded)
1 cup cheese (shredded)
6 cups water
1/2 tsp Salt

Recipe Directions for Val's Potato Soup

  1. Melt butter or marg in soup pot and sweat onions and celery at medium-low heat (Sweating is just under frying)

  2. While vegetables are sweating scrub and chopped potatos and carrot and then add them with the water and salt.

  3. Simmer (not boil) for 20 minute or until potatos are tender.

  4. Lowly add Knorr soup mix of choice and mix well. Simmer another 10 minutes.

  5. Loosely mash the mix being sure to leave it chunky.

  6. Add cheese and croutons to bowl when served.

  7. Enjoy
