Hungarian hunters stew. Missing the seasonings and water as I find that effects the calories that the analyzer spits out. You also need enough water to cover and 7-12 bay leaves, thyme to taste, salt and pepper to taste.

Recipe Ingredients for Vaddashush

2 tbsp oil
4 medium onions
2 lbs baby carrots
8 medium carrots
2 lbs chuck roast
1 can beef broth

Recipe Directions for Vaddashush

  1. heat oil over medium heat in a large dutch oven or pot

  2. saute onion until clear (you may also add severl cloves of garlic crushed for 1 minute at the end of sauteing if desired), remove from pan

  3. salt and pepper meat then brown in the left over oil in the pan, watching closely for burning of any leftover onions.

  4. when meat is fully browned on the outside and starting to weep fluid, add onions and broth back to the pot. add 5 bay leaves, thyme, and pepper. simmer meat in the broth and onions, basting, for about 30 min. when the house starts to smell of bay leaves, add water to cover meat and continue to simmer. skim fat and scum as necessary.

  5. when meat is tender or near tender (may take several hours), add carrots, chopped smaller for quicker finishing, or larger for longer. the longer the meat cooks, the better. just barely cover carrots with more water. you can also toss in a few more bay leaves and some thyme here. taste the broth occasionally and add other seasoning as needed.

  6. when meat is falling apart and carrots are spoon tender, remove meat from stew, remove any fat you can find. anything with a fatty texture can be removed with the edge of a knife carefully rubbed down the side. the more fat removed, the more healthy the dish. set meat aside, spoon some of the broth over meat to keep tender and moist.

  7. remove bay leaves and discard.

  8. blend carrots and broth in batches. you will not need all of the broth. the sauce should have a thick consistency. if desired, stir or blend in 1 cup of sour cream or light sour cream at this point.

  9. once all carrot mixture is blended (there will be left over broth in all likely hood, you can reduce the broth before blending if desired to reduce leftovers), add the meat back in.

  10. serve over pasta with a tbsp of sour cream. i prefer angel hair but egg noodles are more traditional. also good if made thinner to be eaten as a stew on its own.
