Recipe Ingredients for Vaangi bhaath

4 cup, cubes Eggplant
1 tbsp Oil, Vegetable Safflower
1 tsp Curry Powder
1 Salt as per taste

Recipe Directions for Vaangi bhaath

Heat oil in a pan, add asafoetida and curry leaves, 1 tbsp of channa dal and urad dal, add the cut eggplant cubes and cook them until done. Add the curry powder and a pinch of lemon or tamarind paste. Optional coconut powder can be added.
