V8 Spanish Style Rice Recipe

You can use either olive oil or veg oil. For vegetable juice use V8 low sodium if desired.

Recipe Ingredients for V8 Spanish Style Rice

1 tbsp olive oil
1 cup cooked long grain rice
4 cups vegetable juice
1 tsp dried basil leaves, crushed
1/4 tsp garlic powder
2 cups frozen mixed vegetables

Recipe Directions for V8 Spanish Style Rice

Heat oil over med heat. Add rice and cook for 30 seconds, stirring constantly. Add veg. juice, basil and garlic. Heat to boil. Reduce heat, cover and cook for 15 minutes. Add vegetables, cover and cook 10 minutes or until rice and vegetables are tender.
