V8-infused jasmine rice with baby peas and black olives

Recipe Ingredients for V8 Rice with Black Olives and Baby Peas

2 tbsp vegetable oil
4 cup Thai Jasmine Rice
32 oz V8 100% Vegetable Juice
3 stalks Celery
1 medium raw Bell Pepper Red
1 medium Onions
12 oz Olives, Ripe, Canned (Small-extra Large)
2 cup Petite Peas
3 Green Onions

Recipe Directions for V8 Rice with Black Olives and Baby Peas

Heat oven to 350 degrees. Add oil to a skillet and heat to medium high. Add diced yellow onion, celery and bell pepper. Cook until soft. Add raw rice and saute for about 5 minutes. Add V8 juice and bring to a boil. Pour into a glass baking disk (9x13). Cover with foil and bake 40 minutes. Remove from oven and top with choppen green onions, chopped black olives and a whole bag of baby peas. Re-cover with foil and put back into the oven for 15-20 minutes until the peas are warmed through.
