Recipe Ingredients for V-blueberry muffin /pumpkin & oat flour

1 banana, mashed
15 oz pumpkin puree
2 c oat flour
1/4 c maple syrup
1 t baking soda
1 t baking powder
2 t pumpkin pie spice
1 c blueberries, frozen, unsweetened
1 t vanilla

Recipe Directions for V-blueberry muffin /pumpkin & oat flour

  1. combine banana, pumpkin, maple syrup & vanilla in large bowl

  2. combine oat flour, baking soda, baking powder, and spice in medium bowl

  3. add dry ingredient to wet ingredients and mix, don't overmix

  4. fold in blueberries

  5. spray muffin tin with nonstick spray and fill with batter

  6. bake at 375 degree F for 20 minutes
