Recipe Ingredients for UTICA GREENS (Simple and Meatless)

4 lbs escarole
1/4 c extra virgin olive oil
5 cloves garlic
1/2 dried hot pepper flakes
1/2 c bread crumbs
1/4 c cheese, g

Recipe Directions for UTICA GREENS (Simple and Meatless)

  1. Wash escarole well in a sink full of water

  2. Lift out and drain.

  3. Cook escarole in a 7-8 quart heavy pot of boiling salted water until tender, about 10 minutes, then drain in a colander.

  4. Heat oil in same pot over moderately high until hot but not smoking

  5. Saute garlic and red pepper flakes, stirring, until garlic is golden, about 1 minute.

  6. Add escarole, stirring to coat with oil, then increase heat to moderately high and cook, uncovered, stirring occasionally, until escarole is tender and most of the liquid is evaporated, 8-10 minutes.

  7. Season lightly with sea salt.

  8. Spook onto a platter and drizzle with more virgin olive oil, Italian flavored bread crumbs and grating cheese to taste.
