Recipe Ingredients for The Usual Mexican Pizza

32 ounces Rosarita traditional no fat refried beans
11 ounces (can) kroger corn and peppers
2 tablespoons olive oil
2 package pillsbury classic pizza crust
16 ounces mild picante sauce
4 serving (1 cup) shredded low moisture mozzarella part skim
12 ounces (2) boneless skinless chicken breasts

Recipe Directions for The Usual Mexican Pizza

  1. In a stockpot or large saucepan over medium heat, add oil. Sauté onion and garlic briefly until soft. Add blackeyed peas and tomatoes; cook until peas start to soften and break down (you can mash to get to desired consistency). Add salt to taste.

  2. Heat oven to 425°F. Grease two 13 x 9 inch glass pans with olive oil. Unroll dough; place in each pan. Starting at center, press out dough to fit each pan. Bake about 8 minutes or until crust begins to brown.

  3. Spread refried beans evenly over partially baked crust. Spread salsa over beans. Sprinkle with cheese and sliced turkey smoked sausage.

  4. Bake 9 to 12 minutes longer or until edges of crust are golden brown and cheese is melted. Cut and serve.
