This recipe is to use as many garden vegetables as possible. The point is to stretch this pot from dinner for six to hopefully a couple lunches the next day. Enjoy.

Recipe Ingredients for Use Up the Garden Beef Stew

1 1/3 lbs. stew beef
3 oz. mushrooms
3 tbsp. olive oil
6 cups beef stock
180 grams of carrots
1 cup celery
160 grams of yellow squash
1 1/2 lbs. red potatoes
1/2 lb. whole kernel corn
1/2 lb. cherry tomatoes
1 can of beer
3 cups water
2 tbsp red wine vinegar
1/2 cup flour
1 tbsp. brown sugar
1/2 lb. egg noodles

Recipe Directions for Use Up the Garden Beef Stew

  1. Heat 1 of the 3 tablespoons of olive oil in a pot on medium heat. toss in your mushrooms and brown. You want to take out the water and prevent the rubber texture. Once browned season with salt and pepper and remove from pot. Set aside.

  2. Heat the 2 remaining tablespoons of olive oil in the pot and add the stew beef. Add salt and pepper to taste. Once browned season with paprika, garlic powder, chili powder, 2 bay leaves, and chopped basil.

  3. Once meat is seasoned and browned add back the mushrooms.

  4. Chop carrots, celery, squash, potatoes, tomatoes, and then just put them in on top of the meat and mushrooms mix together. and about 2 cups of beef broth and allow veggies to smolder for about 5 minutes.

  5. Add the rest of the beef broth, the can of beer, the water, vinegar to boil. Lower to medium low and simmer for 1 and 1/2 hours. Stir stew about every 15 minutes.

  6. Now add 1/2 lb. of the egg noodles and cook for 15 minutes on low heat.

  7. Take 1/2 cup of flour in separate bowl and mix with the liquid in the stew and whisk. Use your stirring spoon to add the stew liquid a little bit at a time for a thick slurry. Add this to the stew using the whisk. Cook stew another 15 minutes. Let rest ten minutes then serve. You should get eight 1 and 1/4 cup servings.
