My mother's Upside-Down Pizza Loaf recipe, with eggs and milk replaced with their vegan counterparts.

Recipe Ingredients for Upside Down Pizza Loaf

2 tsp oil
1/2 cup onion, chopped
1 tbsp flour
1 cup tomato sauce
1/4 cup chopped bell pepper
1/4 tsp basil leaves
1/8 tsp oregano leaves
1 1/2 tsp Ener-g egg replacer
1/2 cup soy milk
1/2 cup flour
1/2 tsp salt
1/2 cup parmesan cheese, grated
1 1/2 cup mozzarella cheese, grated

Recipe Directions for Upside Down Pizza Loaf

  1. Heat 1/2 tsp oil and cook 1/2 cup chopped onion in a non-stick pan.

  2. Sprinkle with 1 tbsp flour, stirring quickly. Stir constantly for 1 minute.

  3. Stir in tomato sauce, bell pepper (chopped), basil leaves, oregano, and garlic salt and Tabasco (to taste).

  4. Bring to a boil. Reduce heat and cook, stirring frequently, for 1 minute.

  5. Preheat oven to 425 F. Grease loaf pan. Put tomato mixture in pan and sprinkle with mozzarella cheese.

  6. In a small mixing bowl, beat the egg replacer, milk, flour, 1 1/2 tsp oil, and salt until smooth.

  7. Pour over the tomato mixture and sprinkle with Parmesan cheese.

  8. Bake until loaf is puffed and golden - 25-30 minutes.
