Recipe Ingredients for Upside-Down Pineapple Spiced Carrot Cake

540 g pineapple
2 1/2 cups shredded carrot
2/3 cup brown sugar
4 tbsp butter
1 1/3 cup unbleached flour
1 1/3 cup whole wheat flour
1 3/4 cup splenda
1/4 cup sugar
1 cup vegetable oil
3 eggs
3 egg whites
1/4 tsp cloves
1/4 tsp ginger
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla

Recipe Directions for Upside-Down Pineapple Spiced Carrot Cake

  1. Blend flours, splenda, sugar, cinnamon, ginger, cloves, baking powder, and baking soda in a bowl.

  2. Whisk oil, eggs, egg whites, and vanilla together.

  3. Add oil/egg/vanilla mixture and shredded carrots to flour mixture.

  4. Melt 2 tbsp of butter in a 9 inch round cake pan. Add 1/3 cup brown sugar to pan, mixing to desolve. Lay 6 1/2 pineapple ring halves atop butter/brown sugar mixture.

  5. Top with 1/2 of cake batter mixture.

  6. Repeat with second 9 inch round cake pan.

  7. Bake in preheated 350 F oven for 35 to 45 mins or unitl a toothpick inserted in the center comes out clean.

  8. Place platter or plate over cake/pan, and invert while hot.

  9. Let cool, and slice into 8 equal portions.
