Recipe Ingredients for Upside down pear, raspberry and rosemary polenta cake

150 grams lurpak lighter
50 grams Butter
125 grams Polenta
456 grams Pears
125 grams Almonds Ground
60 grams Sugars, Brown
175 grams Sugars, Granulated
1/2 tbsp Vanilla Extract
170 grams Raspberries
1 1/2 teaspoon Baking Powder
3 large Egg, Whole
1 fruit without seeds Lemons
3 tablespoon Rosemary

Recipe Directions for Upside down pear, raspberry and rosemary polenta cake

  1. Heat oven at 180 degrees/mark 4-5.

  2. In a cake pan, put 50g melted butter+60g brown sugar and spread evenly.

  3. Slice pears, toss them in lemon juice and spread evenly on cake pan. Sprinkle rosemary on pears.

  4. Place in oven for about 15 minutes, or until the pears are tender. Set aside.

  5. Cream sugar and rest of butter together until light and fluffy.

  6. Add the almonds, vanilla extract and eggs and mix well.

  7. Mix in lemon zest and juice, polenta and baking powder. Add rest of rosemary.

  8. Fold in 3/4 of the raspberries.

  9. Spoon the mixture into the cake tin and bake for about 20 minutes. Add the rest of raspberries on top of cake and smooth out top.

  10. Bake for another 20 minutes until risen and golden.

  11. Cool cake for 10 minutes before transferring to a plate.
