24 ounces canned 2% milk, partly skimmed
209 grams white sugar
3/4 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground ginger
854 grams pumpkin - canned, without salt
100 grams eggs, Eggland's Best
140 grams egg whites

Recipe Directions for Updated pumkin souffle

  1. ?Sift Sugar, Salt, and Spices in small bowl

  2. ?Beat 4 Jumbo eggs

  3. ?Gradually add pumpkin and sugar mixture to eggs

  4. ?Gradually add 2 cans milk and blend thoroughly

  5. ?pour into 3 ounces of mixture into 4 ounce ramekins

  6. ?place 5 ramekins into 9 x 13 x 2 " baking pan filled with 2 inches water

  7. ?Bake at 350 for 30 minutes or until knife comes out clean.

  8. ?Place ramekins in slightly cool water bath to cool
