Delicious Valentine's treat. Original recipe from Alton Brown used bittersweet chocolate rather than unsweetened. Turned out okay nonetheless?

Recipe Ingredients for Unsweetened Truffles

10 square (1 oz) Baking Chocolate, Unsweetened, Squares
0.5 cup, fluid (yields 2 cups whipped) Cream, Fluid, Heavy Whipping
3 tbsp Butter
0.247 oz Gin, Rum, Vodka, Whiskey
1 tbsp Syrups, Corn, Light
4 oz Minichips Semi Sweet Chocolates
4 oz White Chocolate Chips
4 oz Pecans, Dry Roasted
0.75 cup Coconut Meat, Dried (Desiccated), Sweetened, Flaked, Packaged
0.5 cup Cocoa, Dry Powder, Unsweetened

Recipe Directions for Unsweetened Truffles

Microwave10 oz unsweetend chocolate with butter 30 sec. Mix then repeat. Set aside. Heat heavy cream and corn syrup in a small sauce pan until simmering. Add to chocolate. let stand 2 min, then gently stir to combine starting at the middle and working outward with a rubber spatula. Gently add in the 1/4 cup brandy. Pour into glass baking dish and refridgerate 1 hr. Scoop into balls and roll in hand - CAN GET MESSY! Refridgerate another hour. Melt semi-sweet and white chocolate for dipping. Prepare toasted pecans, coconut, and cocoa in seperate dishes to top. Dip truffles one at a time in chocolate then roll in toppings. Set on pan with parchment paper until hard. Enjoy!
