Recipe Ingredients for Unstuffed Sweet n' Sour Cabbage

2 pound of cabbage, raw
1/2 cup chicken broth
3 cloves garlic, thinly sliced, divided
1 large onion, thinly sliced
1 tablespoon olive oil
1 pound raw ground turkey
28 oz. tomatoes in juice, canned
1/3 cup Cranberries, dried, sweetened
3 tablespoons red wine vinegar
1 tablespoon dark brown sugar
2 tablespoons parsley, chopped

Recipe Directions for Unstuffed Sweet n' Sour Cabbage

  1. Thinly slice onions and garlic, set aside one sliced garlic clove. Quarter cabbage and cut out the tough inner stem. Place cabbage in a pot. Add broth, one clove of garlic and 1/2 teaspoon salt. Bring to a simmer over medium heat and cook, covered, turning cabbage occasionally until very tender about 45 minutes. (Add more broth if necessary.) Meanwhile cook onion over medium heat in oil in a pot 5 minutes. Add remaining garlic and saute 3-5 minutes longer or until golden. Increase heat to medium-high and stir in turkey along with salt and pepper to taste. Cook, breaking up meat, until no longer pink about 3 minutes. Add tomatoes in their juice, vinegar, cranberries, and sugar and simmer uncovered, stirring occasionally until slightly thickened, about 20 minutes. Season. Pour sauce into skillet with cabbage and simmer, uncovered, 5 minutes. Serve sprinkled with fresh, chopped parsley. Season with salt and pepper.
