2 step unstuffed peppers made with V8 100% Vegetable Juice

Recipe Ingredients for Unstuffed Green Peppers

1 lb. beef, ground, 80% lean/20% fat
1 medium onion, chopped
1/2 tsp. dried basil
2 cups vegetable juice
1/2 cup uncooked regular rice
2 medium green peppers, cut into 1-inch pieces

Recipe Directions for Unstuffed Green Peppers

  1. In skillet over medium heat, brown beef. Add onion and basil and cook until beef is no longer pink. stirring to separate meat. Pour off fat.

  2. Add vegetable juice and rice. Heat to boiling. Cover; cook over low heat 10 min. Add green pepper. Cover and cook 10 min. more or until rice is tender.
