This dish tastes like traditional Eastern European stuffed cabbage, but it is "unstuffed."

Recipe Ingredients for Unstuffed Cabbage

3 cup, chopped Cabbage
1 tbsp Extra Virgin Olive Oil
1/4 cup dry Barley, Whole Hull-less
452 4/5 grams Extra Lean Ground Beef

Recipe Directions for Unstuffed Cabbage

Cook the barley in water according to the package directions. Brown the ground beef in a heavy pan (I use cast iron). Remove from the pan. Chop the onion and then saute in the olive oil. Shred the cabbage and add to the saute. When the cabbage is soft, add the barley, browned meat, and tomato juice. Season to taste with salt and pepper.
