"Unstuffed" Bell Peppers Recipe

My family doesn't like biting into large bell peppers so I just chop them one into the following recipe. I adapted this recipe from simplyrecipes.com

Recipe Ingredients for "Unstuffed" Bell Peppers

1 red bell pepper, chopped
1 medium yellow onion, peeled and chopped
1 clove garlic, peeled and chopped
1 lb lean ground turkey
3/4 cup instant brown rice
1 cup chopped tomatoes
3/4 cup corn
1 tsp of dried oregano
1/2 cup ketchup
1/2 tsp of Worcestershire Sauce

Recipe Directions for "Unstuffed" Bell Peppers

  1. Add chopped bell pepper, onions and garlic to skillet with non stick cooking spray, and cook, stirring often, until onions are soft and translucent, about 5 minutes.

  2. Add meat, rice, tomatoes, and oregano, and season with salt and pepper to taste. Mix well.

  3. Let cook until meat is done.

  4. Combine ketchup, Worcestershire sauce, and 1/4 cup of water in a small bowl, then spoon over meat.
