I whipped this up for myself and my sick beau.

Recipe Ingredients for Under the weather chicken soup

4 Cube Chicken Stock Cubes
2 breast, bone and skin removed Chicken, Breast, Meat Only
2.5 cup Spiral Rotini Gluten Free Pasta
2 potato small (1-3/4" to 2-1/4" dia) Potatoes, Red, Flesh And Skin
0.5 cup Beans, Snap, Green
2 large ear, raw Corn Sweet
1 NLEA serving Carrots, Baby
1/2 cup chopped raw Vidalia Onion
2 clove Garlic
1 cup, chopped Peppers, Sweet, Green
1 Cup Shitake Mushrooms

Recipe Directions for Under the weather chicken soup

  1. Chopp all veggies to similar sizes.

  2. Add in order in which they need to sweat. I follow a miriquoa. But that is just me.

  3. Before chopping I threw chicken, seasoned with Mrs Dash in the oven at 475 for about 20 mins. I never wait for pre-heat. I start time after preheat ends. So probably 25 to 30 mins.

  4. Sweat veggies and then add stock. I boil water at the same time I am cooking to breakdown the cubes faster. Then I allow to come to boil while wiaitng for chicken.

  5. Add pasta. Chop chicken or shred, whatever suits your style.

  6. Heat for about 20 mins on low.

  7. Top with cheese and serve with rolls and crackers. Delish. Makes about 10 servings.
