Recipe Ingredients for Uncle Wilson's stuffed bell peppers

6 large bell peppers
2 1/2 cups brown rice
2 lbs lean ground beef, or turkey
1/2 onion, sweet,medium,diced
2 garlic cloves, finely chopped
14 1/2 oz tomatoes, diced in can w/juices
10 oz tomatoes with green chilis
16 oz sharp cheddar cheese
1/2 tsp pepper
1 tsp salt

Recipe Directions for Uncle Wilson's stuffed bell peppers

Preheat oven to 400. Cut bell peppers in half, top to bottom. Remove seeds & ribs. Set aside. In a medium saucepan, cook the rice according to package directions. In a medium skillet, brown the beef, onion, & garlic. Drain the meat. In a medium saucepan, bring tomatoes to a boil, then reduce the heat & simmer 5 minutes. Remove form heat. In a large bowl, combine the ground beef, rice, tomatoes, pepper, salt, & mix until blended. In a 19x13x2 inch pan, place bell peppers skin side down. Evenly divide the beef mixture among the pepper halves. Cover the pan w/foil & bake for 40 minutes. Remove the foil & sprinkle cheese on the top. Return the pan to the oven, uncovered for about 5 minutes. until the cheese melts.
