A friend and I made up this recipe one day and were utterly amazed at how rich and delicious it was. It SO doesn't taste like it's lowfat or low calorie, but it is! If you want to make it REALLY delicious, you can melt a slice of goat cheese or a spoonful of lowfat cream cheese on top of each slice, but even without the cheese it's supercreamy.

Recipe Ingredients for Unbelievably Rich 100 Calorie Quiche

2 zucchini, shredded
200 grams smoked salmon, sliced
4 egg whites
3 eggs
1/2 cup red onion, sliced
1 tbsp chives, chopped
1 tbsp dill, chopped
1/4 tsp sea salt

Recipe Directions for Unbelievably Rich 100 Calorie Quiche

  1. Preheat the oven to 350

  2. Beat the eggs and egg whites together in a large bowl with the salt

  3. Mix in the rest of the ingredients, blend well

  4. Pour into a nonstick or silicone baking pan, bake for 30-45 minutes or until a knife stuck in the middle comes out clean.
