Recipe Ingredients for Ultra Lean Quiche

1 cup Spinach
1/2 cup raw Mushrooms
8 oz Onions
1 cup eggplant
16 oz Egg Substitute
2 wedge Light Original Swiss Spreadable Cheese Wedges

Recipe Directions for Ultra Lean Quiche

  1. Saute vegetables using non stick coocking spray

  2. Drain the spinach and eggplant

  3. Combine eggbeaters w salt, pepper, garlic power and vegetables

  4. Spray one 8"mold w nonstick cooking spray

  5. Pour the mixture

  6. Add the laughing cow cheese

  7. Bake in a 350 oven for 35-40 mins
