Decadent chicken pie for special occasions

Recipe Ingredients for The Ultimate Chicken Pie

200 g puff pastry
400 g chicken breast
200 g bacon
200 g mushrooms
1 tbsp oil
1 pinch cumin
1 tbsp basil
1 bunch spinach
3 potatoes
1 1/2 cups grated cheese

Recipe Directions for The Ultimate Chicken Pie

  1. Grease a 20cm loose-bottomed cake tin.

  2. Preheat oven to 200oC and place a baking tray inside

  3. Take a sheet of pastry, cut out a 20cm circle and line base of tin

  4. Take another sheet of pastry and cut strips, 7cm wide. Use these to line the sides of the tin, pressing base and sides together firmly

  5. Cut chicken into cubes

  6. Slice bacon

  7. Slice mushrooms

  8. Heat oil and cook chicken, bacon and mushrooms over a moderately high heat for 5 minutes

  9. Season well with cumin and basil

  10. Wash spinach and discard stems

  11. Cook until wilted, drain

  12. Cut cooked potatoes into 1cm slices and place in layer on bottom of pastry-lined tin

  13. Arrange chicken mixture on top of potato followed by spinach then cheese

  14. Season with salt and pepper as you go

  15. Cut another 20cm round from pastry

  16. Brush edges with beaten egg

  17. Place lid onto pie pressing sides and top firmly together

  18. Glaze with egg

  19. Make small hole in top for steam

  20. Place pie on hot baking tray

  21. Bake for 35 minutes
