Enormous bran muffins sweetened with honey and raisins and made super-moist with yogurt. Super high-fiber, low-fat, and a great breakfast or snack.

Recipe Ingredients for Ultimate Bran Muffins

1 cup whole wheat flour
1 cup wheat germ
2 3/4 cup wheat bran
2/3 cup oat bran
2 tsp baking powder
2 tsp baking soda
2 tsp ground ginger
3 tbsp natural applesauce
1/3 cup honey
1 1/4 cup skim milk
1 cup nonfat yogurt
166 g (2 extra-large) eggs, beaten
1 cup raisins

Recipe Directions for Ultimate Bran Muffins

  1. Preheat oven to 350 degrees fahrenheit

  2. Combine and mix all dry ingredients in a large mixing bowl

  3. Combine and mix all wet ingredients in a separate bowl

  4. Add wet ingredients to dry ingredients and stir until all of the batter is moistened

  5. Spoon into 12 lined or greased muffin cups (they will be overflowing-this is perfectly alright!)

  6. Bake for 20-25 minutes or until a toothpick inserted into the center of the largest muffin comes out clean

  7. These can be served warm fresh out of the oven or frozen for noshing at a later time (they keep well in the freezer)
