Recipe Ingredients for Ultimate Beef Chili

1 lb beef round, trimmed, cut 1/2 inch chunks
1 pinch of salt
1 pinch of black pepper
1/2 tbsp canola oil, divided
1 onions, chopped
1/3 green bell pepper, seeded, chopped
1/3 red bell pepper, seeded, chopped
2 cloves garlic, minced
2/3 jalapeno peppers, seeded, finely chopped
2 tsp ground cumin
2 tsp chili powder
1 tsp paprika
2/3 tsp dried oregano
4 oz beer
9 1/3 oz tomatoes, diced, 1 can
2 2/3 sun-dried tomatoes, diced
1 bay leaves
6 1/3 oz dark kidney beans, rinsed
1 1/3 tbsp fresh cilantro, chopped
2 tsp lime juice

Recipe Directions for Ultimate Beef Chili

  1. Season beef with salt and pepper. Heat 1 teaspoons oil in a skillet over medium-high heat.

  2. Add beef and cook, stirring occasionally, until browned on all sides, 2-5 minutes, and transfer to slow cooker.

  3. Reduce heat to medium and add remaining 1 teaspoons oil to skillet.

  4. Add onions, bell peppers, garlic, and jalapeno; cook, stirring frequently, until onions are golden brown, and transfer to slow cooker.

  5. Add cumin, chili powder, paprika, oregano, beer, diced tomatoes, sun-dried tomatoes, bay leaf, beans, cilantro, and lime juice to slow cooker.

  6. Cover and simmer, stirring occasionally, until beef is very tender, 1 1/2-2 hours.

  7. Remove bay leaf.
