Recipe Ingredients for Udon salad with eggplant and peanut sauce

6 ounces udon noodles
1/2 cup peanut butter
4 tbsp braggs liquid aminos
2 tbsp mirin
1 tbsp honey
1/4 cup lime juice
1/4 cup water
2 tbsp chili garlic paste
1 tbsp rice vinegar
1 small eggplant
1 large red bell pepper
5 green onions
1 clove garlic
1/4 cup onion

Recipe Directions for Udon salad with eggplant and peanut sauce

  1. Boil and drain udon noodles.

  2. Roast eggplant and peppers and onion.

  3. Mix together peanut sauce.

  4. Combine everything and top with green onions
