Quick and easy meal w/ fresh veggies. Add shrimp or chicken for additional lean protein. The veggies are stir fried, but the eggplant should be roasted.

Recipe Ingredients for Udon Noodles with Peanut Butter Sauce

2 head baby bok choy
1 onion
1 bell pepper
1 medium eggplant
1 tsp toasted sesame oil
2 tsp canola oil
5 cloves garlic
3 tbs low sodium soy sauce
3 tbs rice vinegar
1 tbs toasted sesame oil
1 1/2 tsp sugar
1/2 cup Sugar Free Creamy Peanut Butter
4 oz udon noodles

Recipe Directions for Udon Noodles with Peanut Butter Sauce

  1. Eggplant:

  2. - Pre-heat oven to 400 degrees

  3. - Slice eggplant into 1/2 inch slices & brush slices w/ 1 tsp toasted sesame oil

  4. - Roast for 25-30 min

  5. Sauce:

  6. - combine garlic, soy sauce, sugar, rice vinegar, & sesame oil and mix well

  7. - heat peanut butter in microwave for 15-20 seconds until soft

  8. - stir peanut butter into sauce mixture and whisk well

  9. - keep warm and mixed well until ready to add to noodles

  10. Stir Fry:

  11. - Meanwhile, set water to boil for noodles & chop veggies into rough chunks to prep for stir fry

  12. - stir fry remaining veggies in the remaining canola oil for 2-3 minutes

  13. - cook noodles per package instructions and drain

  14. - remove eggplant from stove and chop into bite size pieces

  15. - add to stir fry

  16. Combine:

  17. - put noodles back in warm saucepan & add peanut sauce

  18. - stir thoroughly & keep warm

  19. - to serve, dish out noodles into large dinner bowls & top w/ stir fried veggies

  20. - you could garnish w/ chopped peanuts & scallions for additional crunch
