A light cooling salad for a hot summer day.

Recipe Ingredients for Tzatziki Summer Salad

16 oz plain yogurt
2 cucumbers, peeled, seeded and diced
2 tbsp olive oil
1 tbsp lemon juice
3 cloves garlic, finely chopped
1 tbsp fresh dill
1 salt and pepper to taste
3 cups broccoli, chopped
1 medium zucchini, chopped
1 small onion, chopped
1 large carrot, shredded

Recipe Directions for Tzatziki Summer Salad

Mix Tzatziki sauce ingredients (yogurt - salt) and chill for at least 1 hour. Pour over vegetables and toss to coat. Serves 4.
