Place shredded cucumber on paper towels over a bowl and sprinkle with salt to drain, pressing occasionally, at least 3 hours. Drain yogurt over paper-towel lined bowl to drain, at least 3 hours (optional if using greek yogurt). In a mixing bowl, combine the yogurt, cucumbers, lemon juice, salt, pepper, dill and garlic. Blend thoroughly and serve.

24 oz Greek yogurt
2 cucumbers, finely shredded
1/4 cup lemon juice
1 teaspoon salt
1 teaspoon ground black pepper
3 tablespoons fresh dill, chopped
3 cloves garlic, pressed
