Traditional Greek cucumber-yogurt sauce. Excellent as a dip, salad dressing, or sauce for grilled meat and vegetables.

Recipe Ingredients for Tzatziki

32 oz Traditional Plain Greek Yogurt
4 clove Garlic
1 medium Hothouse Cucumber
1 lemon yields Lemon Juice
2 tbsp Olive Oil
1/2 tsp Sea Salt
2 sprigs Dill Weed, Fresh

Recipe Directions for Tzatziki

Pour yogurt into a medium bowl, but do not discard the container. Finely shred the cucumber, then sprinkle with a little salt and let sit for 10 minutes. Squeeze out as much juice as possible from the cucumber, then add the cucumber to the bowl of yogurt. Mince the garlic and dill, and add to the bowl. Add the lemon juice, olive oil, and remaining salt to taste. Stir everything together very well, then scoop back into the yogurt container (if it doesn't all fit, grab some pita and eat the rest!) Refrigerate for 1-24 hours before eating for best flavor.
